Lazy Chicken Asparagus Mac

Some days are for smoothies, salads, and meal prep magic… and some days are for Lazy Chicken Asparagus Mac.

This dish is warm, cheesy, filling, and a real-life favorite when we want something cozy but don’t want to rely on takeout or fast food. It’s not fancy, but it is delicious — and we think it’s a great in-between: a comfort meal with a small veggie & protein boost.

🥄 Lazy Chicken Asparagus Mac Recipe

Serves: 4-6
Prep Time: ~15 min (plus marinating)
Cook Time: ~30 min

Ingredients:

  • 2 boxes Annie’s White Cheddar Shells

  • 1 lb thinly sliced chicken breasts or tenders

  • Honey Dijon marinade (we love the one from Sprouts, but any honey dijon marinade will work!)

  • 1 bunch asparagus, chopped into bite-sized pieces

  • ¼–½ cup grated Parmesan cheese

  • Salt & pepper to taste


Instructions:

1. Marinate the Chicken

Marinate the sliced chicken in honey dijon dressing — ideally overnight, but even an hour helps! (Pro tip: We marinate and freeze batches so they’re ready to go anytime.)

2. Cook the Chicken

Bake at 375°F for about 20 minutes, adjusting for thickness and quantity. When done, dice the chicken into small, bite-sized pieces.

3. Prep the Asparagus

Chop asparagus and either sauté it lightly or boil until just tender. Drain and set aside.

4. Make the Mac

Cook the two boxes of Annie’s mac according to the package directions.

5. Mix It All Together

Stir in the chopped chicken and asparagus into the mac and cheese until fully combined.

6. Bake It Off

Pour everything into a baking dish, top with freshly grated Parmesan, and bake at 375°F for another 7-10 minutes until warm and bubbly.
